
Why the Best Bakers Love Infrared Heating
Most ovens just blow hot air around. It works, sure, but it’s slow. You’re basically waiting for the air to get hot, then waiting for that air to heat the bread. That’s why we put infrared (IR) lamps in our high-end ovens. Instead of waiting on the air, these lamps send radiant energy straight into the dough. It’s instant.
The secret to that perfect crust
Think of it like stepping into the sun on a cold day. You don’t wait for the air to warm up—you feel the heat on your skin immediately. That’s what happens to your bread. This “hit” of heat triggers a rapid oven spring, giving you that gorgeous volume and the kind of crust that actually cracks. Depending on what you’re baking, we pick different wavelengths. Short-wave is lightning fast. Medium-wave is what you want when you’re dealing with dense, heavy loaves that need the heat to soak in deeper.
The nuts and bolts
If you look inside, you’ll see quartz tubes filled with halogen gas. We use quartz because it doesn’t warp when things get screaming hot. The halogen part is just a clever way to keep the tungsten filament from wearing out too fast, so you aren’t replacing bulbs every other week. We keep things simple with R7s or SK15 connectors. They’re basically plug-and-play. And for the big industrial lines, we usually go with 230V or 400V. Higher voltage means we can use longer tubes without pulling too much current. It keeps your wiring from getting dangerously hot.
The tricky part
Here’s the thing: these lamps pack a massive punch. If you aren’t careful, you’ll torch the outside of your bread before the middle is even warm. To stop that from happening, you need a solid PID controller and a timer you can trust. You also have to make sure your cooling fans are up to the task. If the lamp housings get too hot and that heat bleeds into the electronics, your control boards will fry. Not a fun day for anyone. We mount the lamps specifically to hit the top of the loaf. The IR sets the crust quickly, while the convection air does the heavy lifting on the inside. It’s the best of both worlds.
