
Why the Best Bakers are Adding IR to Their Convection Ovens
Most convection ovens just blow hot air around. Now, that’s great for keeping things even, but air is actually a pretty lousy conductor of heat. It takes its time. That’s why we started putting shortwave infrared (IR) heaters into the mix. It fills the gap between the air temperature and the actual surface of your bread. The secret is in how the heat moves. With standard convection, you’re heating the air, and then the air heats the dough. It’s a bit roundabout. IR heaters just skip the middleman. They send out electromagnetic radiation that hits the bread almost instantly. This is where the magic happens. You get that rapid “oven spring” and a deep, rich crust color—thanks to the Maillard reaction—without drying out the inside of your loaf. You get a crisp shell and a soft center. Exactly how it should be. Let’s talk gear for a second. We usually go with high-watt density quartz tubes. Depending on how big your oven is, the voltage and length will change—usually 230V or 400V—just to make sure the heat stays steady across the whole rack. And we kept the connectors simple. We use R7s or SK15 because they’re basically “plug and play.” If a lamp burns out during a rush, you just swap it out in seconds. No need to tear apart the control board or call in an electrician for a five-minute fix. A few things to keep in mind. We use halogen-filled quartz because they ramp up fast. Like, seconds fast. You aren’t standing around waiting for the oven to catch up. But here’s the catch: high-intensity IR pulls a lot of power. If you’re running 2000W+ per tube, your wiring needs to be beefy enough to handle it. If the gauge is too thin, you’ll see voltage drops, and that’s a headache nobody wants. Why bother? Because it fixes those annoying problems we’ve all dealt with—like the “pale top” or the “soggy bottom” you get with air-only ovens. You get the best of both worlds: the steady air from the fan and the searing power of radiation. It cuts down your bake time, which means you can push more trays through every shift without sacrificing the quality of the crust.
